As you, the reader of this blog, know, there are several aspect I see with omelet, appearance which comes from how to cook, texture and taste, and I have been telling in the past articles that “seamless, round-shaped like rugby football” is one of the benchmark, and I could not hide my somehow disappointment with “three-folded” ones, as this should also lead relatively chewy, or to say not softened texture, while seamlessly rounded provides you juicy, half-cooked egg york with very softened texture thanks to many layered sheets of softly cooked and heated egg york like Mille fille.

Yes, I am great believer of seamless rounded omelet, so this time I got surprised with this; even two-folded, but texture was solely as expected to rounded one! Take out your perception…

Les Saisons, Imperial Hotel, Tokyo

A week ago, I was invited to a breakfast meeting with a gentleman from Hong Kong. He knew my favorite omelette, and he loves, as far as I understand, to come back here, so I could come back and enjoy this perfect dish of omelette again.

He told that he should go and see around Sendai area, as his fund has been investing into some companies in that area. I hope he could find how they are being positive to their lives despite of unfortunate devastation in this spring…

Le Cafe, Novotel Century, Hong Kong

And, no wonder I can put one from where I stayed honourably!

As usual, breakfast meeting is one of the biggest challenge as you have to eat for the rest of the day, but you also have to talk 😀  So I can recall I was the last person to clean up dishes…

Clipper Lounge, Mandarin Oriental Hong Kong

I was back in Hong Kong short a while ago, and spent a week at Novotel Century, as none of 5 star hotels were available due to more visitors in the island (partially because of wealthy refugees from Tokyo as well as French bankers in Tokyo).  But, I was lucky enough to invite friends to breakfast to catch up, and it was good excuse to have nice breakfasts in Central area like Mandarin Oriental.

I suppose it was more than two years ago to hop around hotels in Hong Kong Island to compare omelet, and Clipper Lounge was one of destination.  They were serving three-folded omelet as same as other Hong Kong hotels, and this time again.  But I can recall their other selection of dishes increased.  Enjoy!
